Ingredients You Need
- Dried Pasta – I used linguini, feel free to use any of your favorite long pasta!
- Olive Oil – extra virgin olive oil is best
- Butter
- Garlic – Freshly minced
- Peeled Raw Shrimp – The bigger the better
- All-Purpose Flour – Or a gluten-free flour substitute
- White Wine – use a dry white wine like Sauvignon Blanc or Pinot Grigio
- Heavy Cream – Just a little goes a long way for an ultra-silky texture
- Grape Tomatoes
- Pitted Kalamata Olives
- Baby Spinach – Or arugula
- Crumbled Feta Cheese – or parmesan cheese
- Salt and Black Pepper – to taste
How to Make Mediterranean Shrimp Pasta
Boil some salted water and cook your linguine noodles as directed on the box. Then, drain the noodles and set them aside.ย
In a medium sautรฉ pan, add some oil and butter. Then, in a separate bowl, sprinkle flour over the shrimp. Once the butter is melted, add the shrimp and garlic to the sautรฉ pan.
Cook the shrimp and garlic for one minute before adding the cream and the wine. Mix it all together and let that cook for another minute before adding the olives and tomatoes. Stir it all together and let it cook for another minute or two.
Pro Tip: Shrimp cooks super quickly! It just needs about 5-6 minutes to fully cook.
Lastly, add in the drained pasta and spinach leaves. Cook until the spinach has wilted down. Season the dish, but be careful because the olives and feta cheese are very salty already.
Spoon into your serving dish and sprinkle with feta cheese and a squeeze of fresh lemon juice, if desired, and serve!
Serving Suggestions
This Greek shrimp pasta is amazing all on its own, since it has protein, carbs, and veggies all in one! But if you are feeding a crowd, I recommend serving it with a few sides like crusty bread and a fresh salad. Here are some of my personal favorites:

Tips & Tricks
- Don’t overcook the shrimp! Once you add the shrimp to the pan, the cooking process will go quickly. Make sure to have all the other ingredients prepped and ready so you don’t overcook the shrimp!
- For a hint of spice, add a little bit of red pepper flakes to the mix!
- If you aren’t a fan of shrimp, feel free to replace the shrimp with diced chicken! These flavors would go well with scallops too.
- If you prefer not to cook with alcohol, add a dash of chicken broth to the pan instead of wine!
Frequently Asked Questions:
What does scampi mean? What is scampi?
Scampi is another term used for large shrimp or prawns, especially when cooked in garlic butter.
How can I thicken the scampi sauce?
Adding cold butter to the pan with the wine will thicken the sauce as it melts in. You can also coat the shrimp with a heavier coating of flour to thicken the sauce.
Do you have to devein the shrimp?
You do not have to clean the shrimp, but I suggest deveining them if you have the time.
However, peeled, deveined raw shrimp are available at most major grocery chains.
Is this Greek shrimp pasta a good leftover dish?
Actually, yes! This Greek shrimp pasta will hold up for 2-3 days in the refrigerator. Rewarm it in a large skillet or in the microwave.
