Ingredients You Need

  • Sugars – both granulated white sugar and brown sugar
  • Butter – unsalted is best for controlling the amount of salt you add
  • All-purpose flour – can be gluten-free
  • Eggs – unsweetened applesauce can be used as a healthy substitute for eggs
  • Lemon zest – fresh is best
  • Blueberries – fresh, or frozen (don’t thaw)
  • White chocolate chips – or roughly chopped white chocolate bark
  • Vanilla extract – use high quality for the best flavor
  • Baking powder and Baking soda – leavening agents for fluffy and chewy blondies
  • Salt – a bit to balance the sweet flavors

How to Make White Chocolate Blueberry Blondies

  1. Preheat your oven. Meanwhile, melt the unsalted butter and sugar together, either in the microwave or on the stovetop.
  2. In a large mixing bowl combine the dry ingredients and fresh lemon zest. Then stir in the eggs, vanilla extract, and the melted butter and sugar.
  3. Press the mixture into a 9 x 13 inch. baking dish and evenly sprinkle white chocolate chips over the top. In a medium-size mixing bowl toss the blueberries (fresh or frozen!) with flour and add them on top of the blondie batter.
  4. Bake the blondies per the recipe card below. Use the toothpick method to test and see if they are done. Cool to room temperature before attempting to cut the blondies and enjoy!

Blueberry White Chocolate Blondies

  • Preheat the oven to 350 degrees F. Melt both sugars and the butter together until the brown sugar is mostly melted. (You can do this in the microwave for 2-3 minutes or on stovetop.)
  • Mix the flour, baking soda, baking powder, salt and lemon zest together. Add the melted sugar mixture and stir. Then add the eggs and vanilla. Stir well.
  • Press the mixture into a greased 9 X 13 inch baking dish. Sprinkle the white chocolate chips over the top. Then toss the blueberries with 1 tablespoon of flour and sprinkle them over the top.
  • Bake for 45-55 minutes, until a toothpick inserted into the middle comes out clean. If the edges of the blondies start to get dark, loosely tent a piece of foil over the top of the pan. Cool to room temperature before cutting.
