Spectacular recipe!  Absolutely delicious.  I made this several times and the curry base is what makes it so good.  The ingredients themselves are very flexible but come out delicious with this curry.  I’ve made with potatoes or even swapped half potatoes and have fresh cauliflower to cut down on the starch. Sometimes I toss in chopped carrot. I have used frozen green beans instead of okra.  Also  LOVE your sweet potato chickpea curry too!  Thank you for posting amazing recipes. So many folks post something and you’re like- did you bother to cook it before rating/posting. These recipes are tried and true!
